Wine cellar

The italian wine makers Grandi & Gabana are specialized in the production of fine wine made in Italy: red wine and white wine from Friuli (Northeast Italy). Italian DOC wines and IGT wines obtained from wine grapes Tocai Friulano, Pinot Grigio, Pinot Bianco, Refosco dal Peduncolo Rosso, Cabernet Sauvignon, Cabernet Franc, Merlot.

The wine cellars are situated in a protected mineral water basin area, where the environment has always been protected from pesticide treatments. For this reason, and also to guarantee the highest quality of the mineral water bottled by the Fonte Corte Paradiso, which emerges in the heart of the vineyards, the wine cellars are not located underground.

Wine cellars are situated in a large building, organized in four zones:

1 - Arrival of the wine grapes:
  - vibrating machines for wine grape selection;
  - manual selection of the bunches for high quality wines.

2 - Red wine making:
the rooms are planned for three different types of wine making:
  - mechanical tradition vintage machines for the regulation of the extracting and
    soaking period with automatic temperature control;
  - steel vats for wine making with semi-automatic delastage and gradual
    extraction;
  - wood vats with delastage for traditional extraction.
The three different types correspond to:
  - best wine selection;
  - wines obtained from one variety of grape;
  - vintage wines for daily consumption.

3- Rooms for wine aging:
  - two areas for barrels and barriques and two small areas for the best wine selection;
  - here the malolattic fermentation is done directly in wood.

4 - Wine storage rooms and white wine making area:
a central area where the red wines complete the malolattic fermentation and the white wines mellow in the traditional way before being assembled. The structure includes a working areas and a technological bottling area.

An air-conditioned warehouse guarantees the integrity during the aging and refining phases of the wine making process.

All the wine making steps are controlled and analyzed by a laboratory. Every wine container is controlled by a computer. Italian wine makers Grandi & Gabana guarantee the traceability and quality of wines in terms of objective, hygienic and health parameters.
