Arhiis IGT Venezia Giulia

Grapes: Malvasia and Friulano.

Surface vineyards: 15 hectares.

Type of soil: clay and sand.

Training system: Guyot 4700 plants per hectare.

Winemaking: Harvest early for Malvasia in order to reap greater aromatic complexity and the high acidity, cold maceration in the press for several hours and then sent to fermentation. Friulano is hand picked at full ripeness, pressed and then fermentation at controlled temperature. The two varieties are then fine-tune on the lees until the spring to then be assembled.

Refining: 80% of maturation in steel tanks, the remaining 20% evolved in small barrels of French oak and bottle aging for the next four months.

Food pairings: Appetizers, seafood starters, risottos, and white meat
